Restore to standalone server

Hi,
I have SQL2000 standard server in remote datacentre with 6 DBs approximately 2GB of data + logs. I have setup SQL backup as follows:
MON<> FRI - 02:00 Full DB backup
MON <> FRI - Hourly from 08:00 until 18:00 log backup
As a test I xipped the files and copied across WAN to our local dev server, created a new DB and started restore process. All goes well but have a few questions if I may?
1 - What account does it run under. I have to always change to Windows login when creating backup or restore jobs but back to SQL for actual backup/restore scheduled process? Odd..
2 - We have a DB login called "Staff" in teh security tab of EM. When restoring to local server I have to remove that login form the actual DB sysuser table, then go back to security tab and check all DB permissions, is this normal?
